Healthy Banana Bread with Applesauce| Love Real Food!

One of my friends who visited last month asked me if I could make her some banana bread again. She calls it “the healthier version but not overly healthy”. Ever since I talked to her about watching her carb intake and just switching to healthier ingredients since she is trying to focus more on whole foods consumption.

Although I won’t call this low carb because obviously there we are using ingredients that still have carbs in it but fewer in calories. So if you are looking for a low-carb dessert, check out my keto cake recipe.


Why is this banana bread healthier than the traditional recipe?

  • No artificial sugar! In this recipe, we will use over-ripened bananas and apple sauce to sweeten the bread. And because those are all-natural sweeteners, our body breaks down the crabs easier than unhealthy artificial sweeteners processed from the lab. You can buy pure applesauce (unsweetened) ahead of time before making this recipe.

  • Whole wheat flour is drastically different from bleached white flour. The way they process bleached white flour removes the most nutrient-rich components of the wheat kernel, whereas whole wheat flour is prepared by grinding whole wheat kernels into a powder. As a result, whole wheat flour is usually regarded as being healthier.

  • Using extra virgin coconut oil instead of dairy oil or other vegetable oil. Coconut is a good oil replacement for baking goods. Although, you should consider a good brand when buying some extra virgin coconut since some bands have strong flavor and odor that can overpower the recipe. I like to buy the extra virgin coconut oil since it’s unrefined and it tastes even better if it’s stored in a glass jar and I always keep it in the fridge so it doesn't spoil easily.

Baking Notes:

Allow 30 minutes for the batter to rest before cooking to allow the flour to absorb the liquid.


Ingredients:

1 1/2 cups whole wheat flour
1 cup ripe bananas
3/4 cup pure applesauce
¼ cup coconut oil
1 large egg
½ tablespoon vanilla extract
½ teaspoon cinnamon
1 teaspoon baking soda
½ teaspoon salt
2/4 cup roughly chopped cashews (or any nuts of choice)


Preparations:

Mash the bananas using a fork until smooth or you can also use a food processor or a blender. I use a stick blender since I also use it to puree the cooked apple for my apple sauce but feel free to use a store-bought unsweetened apple sauce.

Add the apple sauce, eggs, coconut oil, vanilla extract and use a stand mixer on medium speed until well combined.

In a separate bowl, whisk together whole wheat flour, baking soda, cinnamon powder, and salt.

Slowly add the dry mixture into the wet ingredients and use the stand mixer on low speed. Add nuts and mix by folding them into the mixture.

Let rest for 15-30 minutes to achieve a moist texture in your banana bread. Preheat the oven to 350 F or 176 C for at least fifteen minutes. Adjust the oven rack to the middle of your oven.

Brush the baking pan with a little bit of coconut oil (optional: you can also use parchment paper so it’s easy to transfer your banana bread). Bake for 50 - 60 minutes but check every now and then after baking for 50 minutes. To tell if bread is done, stick a toothpick and see if it comes out clean, then it’s cooked. Allow the banana bread to cool at least 10 minutes before removing it from the pan. Enjoy with your favorite milk or hot coffee! =)

I wished I sliced the banana bread before it got delivered to my friend's place but I wanted it to look nice and for her to serve it to her family while it's still warm. Glad they loved it! =)

A short announcement!

One of purepinay's creations will be available to sell online.I have been experimenting with this cookie recipe for over three years now ( I know right!) and finally was able to choose my favorite of all time. I was able to deliver some samples to @ybanezkim26 since we had a plan of meeting in person last Friday, but sadly he wasn't feeling well after he got his covid-vaccination so I thought I could just deliver it to him. Thanks to food Grab pick up, it's easier to deliver goods around the city.
